Sheets: You only really need two sets of sheets for each bed in your house: one in use on the bed, and one in the closet. When you take off the sheets to launder them, remake that bed with the set in the closet. Rotating sheet sets will keep them both of them fresher.
Pillowcases: Discard any pillowcases that are soiled or frayed. Keep pillowcases that match your sheet sets, and rotate them as well. Keep extra pillowcases that are in excellent shape because they can be used in different bedrooms.
Blankets: Blankets tend to be very bulky, so keep only what you need. Think of investing in an appropriate summer weight blanket and one winter blanket for each bed. Keep sleeping bags on hand in case of a sleepover.
Bath Towels: Each person in your house should have two towels that can be rotated on laundry day. Keep an extra towel for each overnight guest you might accommodate. (Therefore if you only have sleeping accommodations for two overnight guests, you don't need 12 extra towels!)
Hand Towels: Keep two hand towels per bathroom and rotate them on laundry day. Dish towels get soiled easily, so you may need to change them between laundry days if necessary, keep one per day of the week.
Beach Towels: If your family swims frequently, you'll need more towels than if you rarely go near the water. A basic rule is to keep one beach towel per family member, plus extra towels for guests that may need them.
Tablecloths and Napkins: If you use linen tablecloths and napkins keep those that are seasonal or sentimental for some reason. If they are leftover from an earlier period in your life or being kept to keep someone’s feelings from being hurt, perhaps it’s time to part with them if you never use them. If you do keep them, make sure you keep only those that fit the table you currently have, and only those that are free of stains. Store them in a way that you know what you have and can find what you need.
